A Nutty Way to Take More Coconut Oil

I am trying to think of ways to add coconut oil to our diet. Almonds and Macadamia nuts have the highest ratio of omega 3 to omega 6, so we are switching nut butters instead of peanuts which are really legumes. I purchased some natural almond butter from the health food store and it was almost $10 for 6 oz! Yikes, so I have decided to make my own. I soaked a pound and a half of raw almonds in pure water overnight to soften them and to neutralize the phytic acid.

Once soaked the almonds doubled in size and filled up a half gallon mason jar.

I drained them and let them begin to sprout, which only takes about a day. Making small batches in the food processor I used the one and a half pounds of almonds, one pound of macadamia nut pieces, almost 16 oz. of coconut oil and enough Real Salt to taste. Process everything until the consistency is a smooth as you like.

Mix everything well in a bowl and check for salt then pack in mason jars and store in the refrigerator. The coconut oil will harden more than plain almond butter, so you might need to let it warm up to room temperature to be easily spreadable.

Being on a low carb / high healthy fats diet, I have been seeking ways to have healthy, satisfying snacks on hand and this nut/coconut butter is great in celery or on apple slices.

I was amazed that this batch filled 6 twelve oz mason jars! What a huge savings, and a great way to take coconut oil. We can polish off a one pound bag of almonds pretty quick, and this is a good way to get the flavor and satisfaction without eating too much.
